Sauteed Oyster Mushrooms with Garlic Butter

Ingredients

  • 10 ounces oyster mushrooms
  • 1 tablespoon extra virgin olive oil
  • Salt and freshly ground black pepper
  • 2 tablespoons butter
  • 1 clove garlic, finely chopped or grated
  • ¼ cup fresh Italian parsley leaves

Instructions

  1. Prep the mushrooms: Pat them dry and trim off the stems. Separate large clusters into more bite-sized pieces.
  2. Heat a nonstick pan over medium-high heat and add oil.
  3. Arrange mushrooms in a single layer and cook until golden brown and crisp on one side. Season with salt and pepper and toss. *If necessary, cook in batches.
  4. Transfer cooked mushrooms to a serving platter.
  5. In the same pan (off the heat), melt butter with garlic and parsley.
  6. Pour the garlic butter over the mushrooms and serve.

Baked Shiitake Mushroom

Ingredients

  • 4 tablespoons olive oil extra-virgin
  • 1 tablespoon white wine vinegar or red wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 lb. fresh shiitake mushrooms rinsed and dried; stems removed if you wish*
  • 2 tablespoons parsley chopped, for garnish

Instructions

  1. Preheat your oven to 400°F. Line a large, rimmed baking sheet with high-heat-resistant parchment paper.
  2. In a large bowl, whisk together the olive oil, vinegar, kosher salt, black pepper, garlic powder, and dried thyme. 
  3. Add the mushrooms and toss to coat. 
  4. Transfer the coated mushrooms to the prepared baking sheet.
  5. Bake until tender, about 20 minutes. Garnish with chopped parsley and serve.

Lion’s Mane Mushroom Steaks

Ingredients

  • 3 tablespoons oil
  • 1 tablespoon butter (vegan butter can be used)
  • 1 lb. lion's mane mushrooms
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a cast iron pan until very hot. Add half the oil and half the butter, swirling to coat.
  2. Add the mushrooms in one layer. Use another heavy pan or pot to press the lion's mane down. Cook for 2 minutes. Transfer the fungi to a cutting board.
  3. Flip the mushrooms and season the cooked side with half of the seasonings.
  4. Add the remaining oil and butter to a pan. Return the mushrooms uncooked side down. Use another pan to press again, for 2 minutes.
  5. Remove the weight and flip the mushrooms. Add the remaining seasonings. Return the weight and press for another 2 minutes.
  6. Keep repeating the process until your lion's mane mushrooms are golden brown, pressed, and crispy, for about 10 minutes in total.

Yellow Oyster Mushrooms on a Brie Toast

Ingredients

  • 7 ounces mixed oyster mushrooms
  • 3 tablespoons butter
  • 2 cloves garlic, crushed (or 6 garlic scapes, chopped)
  • 1 tablespoon white wine (optional)
  • 4 sprigs of fresh thyme
  • 4 slices of thick crusted bread, toasted
  • 4 ounces good quality Brie cheese

Instructions

  1. Clean the mushrooms and tear large ones into 1-inch pieces.
  2. Heat a nonstick pan. Add butter, mushrooms, and salt. Cook for 2 minutes, then add garlic scapes and wine (optional). Cook for another 1-2 minutes until mushrooms turn golden brown. Add thyme and set aside.
  3. Preheat the broiler.
  4. Cut Brie cheese into slices and place them on the toasts. Add 1/4 of the cooked mushroom mixture on top.
  5. Arrange the toasts on a baking sheet and place them under the broiler for 1-2 minutes until the Brie melts and the edges turn brown.
